Here you go, recipe of the day!
Stir-fried scallops with leeks, red capsicum and thyme.
(Serves 5-6 people)
Ingredients
700grams of scallops
2 tablespoon of butter
5 cloves of garlic(minced)
2 leaves of leek (green part)
1/2 capsicum (chopped into bite size pieces)
1 brown onion(cut into strips)
2 tspn cornstarch
A small bunch of thyme
Salt
Pepper
1.Heat a frying pan at high heat and add butter when the pan is hot.
2. Add minced garlic and stir fry till lightly browned.
3. Add onion,capsicum leek and thyme and continue to stir fry.
4. Add in scallop and stir fry till cooked
5. Dilute the cornstarch with some water and pour it in. Continue stir frying until the liquid thickens.
6. Season with salt and pepper to taste
7. Ready to serve and enjoy!
